Baked grey dorade fillets on summer vegetables
Ingredients
- 4 grey dorade fillets
- 2 zucchini
- 2 tomatoes
- 1 eggplant
- 2 yellow onions
- Olive oil
- White balsamic vinegar
- Sikara pepper
- Flax seeds
Instructions
Slicing
- Peel the onions and chop finely
- Spread the onions at the bottom of the dish and drizzle with olive oil
- Season with salt
- Slice eggplant, zucchini and tomatoes finely
Mise en place
- Evenly arrange the sliced vegetables on top of the onion
- Season with olive oil and salt
Baking
- Bake for 35 minutes at 170°C = 338°F
Seasoning the fillets
- Season the fillets with salt and ground flax seeds
- Remove the vegetables from the oven
- Season the vegetables with Sikara pepper and olive oil
- Lay the grey dorade fillets skin-side up
- Again, drizzle with olive oil
- Return to oven for 15 more minutes
